Story: This unusual crop produces beautiful yellow flowers open in the morning and close in the afternoon, the roots are said to taste like oysters (they do a little) and the young shoots and leaves and even flower buds can be steamed like asparagus. The roots need to be peeled, this is much easier if you steam the roots whole first. Try roots steamed, peeled and dipped in melted butter…delicious! This plant is biennial, be sure to harvest roots in the first year’s growth before they flower.
Sow: March – May direct
Requirements: full sun, moist soil, warmth and humidity.
